Jovial Foods Einkorn All-Purpose Flour, Organic

Made from nature's orginal wheat, einkorn has remained untouched by modern hydridization and large-scale agriculture for 12,000 years. Einkorn is fast becoming the wheat of choice for the gluten sensitive due to its very weak gluten. All Purpose is a high-extraction, lighter four that has has 20% of the bran and germ removed after milling and will stay fresh longer. Bake beautiful bread, cakes, muffins, and cookies with Jovial's Organic Einkorn Flour - it's much easier to work with than gluten free flour.

When Carla and Rodolfo has the idea of growing einkorn wheat, there was very little of this grain being cultivated worldwide, so they had to coordinate the farming themselves. Their search led us to this farm, where they had been growing ancient varieties of oats, barley, emmer, lentils, and chick peas for over thirty years. They had never planted einkorn before, and now, only a few years later, we are working together on this project in a perfect partnership committed not only to what we are growing, but how we grow it.
